Tortellini Salad (inspired by Aunt Kelly’s Thanksgiving dish)
1 red bell pepper
1 green bell pepper
1 cup grated parmesan cheese
1 16 oz. bag frozen tortellini
Italian dressing
Pepper (to taste)Set tortellini to boil until cheese inside is soft. Dice both peppers and set aside. Drain tortellini and place in a large bowl. Add peppers (may not use them all, and if you’re Char, you’ll pick them all out anyway) and Italian dressing. Toss thoroughly. Sprinkle parmesan over the salad and add pepper. Serves 4-6 normal people and two hungry college students named Jer and Char.
